Ingredients:
1 cup muskmelon seeds (roasted)
1 cup dates (pitted)
1/2 cup dried apricots
1/2 cup nuts (almonds, walnuts, pistas or your choice)
1/4 cup shredded coconut
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
A pinch of salt
Instructions:
Roast muskmelon seeds in a pan until they are slightly golden and aromatic.
In a food processor, blend the roasted muskmelon seeds, dates, dried apricots, nuts, shredded coconut, honey (or maple syrup), vanilla extract, and a pinch of salt until the mixture forms a sticky dough-like consistency.
Line a square baking pan with parchment paper and press the mixture evenly into the pan.
Place the pan in the refrigerator for a couple of hours to set.
Once set, remove from the refrigerator and cut into bars.
