Ingredients:
1 cup pumpkin seeds (raw or roasted)
¼ cup nuts like almonds, pistas, cashews
1 cup dates (pitted)
1/2 cup rolled oats
1/2 cup dried cranberries or raisins
1/4 cup nut butter (almond, peanut, or your choice)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
A pinch of salt
Instructions:
If your pumpkin seeds are raw, you can roast them in a pan until they are slightly golden and aromatic.
In a food processor, combine pumpkin seeds, nuts, dates, rolled oats, dried cranberries (or raisins), nut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until the mixture forms a sticky, uniform dough.
Line a square baking pan with parchment paper and press the mixture evenly into the pan.
Place the pan in the refrigerator for a few hours to allow the bars to set.
Once set, remove from the refrigerator and cut into bars.
